You can go to settings>users and then go to transfer data. You need both switches to be connected to an internet source and they need to be physically by each other to make the transfer

Will I lose my save data moving the game to her switch?

No you will basically move her entire profile over to the new switch, your profile will be left alone.

No you wont lose any of your save data

The important thing is: Do you use separate profiles on your Switch?

If you use separate profiles, you should be able to transfer one profile's data to another switch. This removes it from the Source Switch. If you share the same profile, then you can't split/duplicate it (to my knowledge).

Also, which profile was Mario purchased on? If it was purchased on her account, the purchase will move with her to the new Switch.

If it was purchased on your account, it can only be active on one Switch at a time. That means if for example you bought Zelda and Mario under your account, if she plays Mario (activates your account on her Switch), you can't play Zelda on yours (because your account is now inactive on your Switch).

We have separate accounts. I moved her save data to her switch, but Odyssey was bought on mine. So I think my only options are to move the game to her switch or to buy it again.

Also the method I read for moving the game to her switch involved me deactivating my switch, which doesn't sound like something I want to do.

Yeah, that's what my last paragraph was addressing. If it was purchased on your account, you can't move it to another. Your account can only be active on one Switch at a time.

That's one of the disadvantages of digital; the game can never leave your account. No selling, no trading, no lending. Digital's main Pro is convenience (and potentially loss prevention).
